As the crisp autumn air settles in, it’s time to embrace the warm and comforting flavors of fall. One of the best ways to celebrate this season is by incorporating seasonal produce into our meals. In this blog post, we’ll explore a classic recipe for creamy pumpkin soup, possible recipes using apple PLUS featured charcuterie board!

 

 

Classic Pumpkin Soup with Cream

Ingredients:

  • 1 can (15 oz) pumpkin puree (or 2 cups fresh pumpkin, cooked and pureed)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 3 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 tsp ground cumin
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley or pumpkin seeds for garnish

Instructions:

  1. Sauté the Aromatics:

    • In a large pot, heat the olive oil over medium heat.
    • Add the chopped onion and sauté until translucent, about 5 minutes.
    • Stir in the minced garlic and cook for an additional minute, until fragrant.
  2. Add the Pumpkin:

    • Stir in the pumpkin puree and mix well with the onions and garlic.
    • Add the vegetable or chicken broth and spices (cumin, nutmeg, cinnamon).
    • Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 15 minutes.
  3. Blend the Soup:

    • Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a regular blender in batches.
  4. Add the Cream:

    • Once blended, return the soup to the pot (if needed) and stir in the heavy cream.
    • Heat the soup over low heat until warmed through, but do not boil. Season with salt and pepper to taste.
  5. Serve:

    • Ladle the soup into bowls and garnish with fresh parsley or pumpkin seeds.

Assembly:

  1. On this featured charcuterie , we used oval plate from DTOCS, arrange the cheese and hummus.
  2. Fill in gaps with other fall-colored dried fruits, chips, chocolate pretzels and nuts.
  3. Garnish with fresh herbs or in this time, carrots, some edible flowers for an extra pop of color.
